lemon cream

Ingredients :
3 large critrons
40 cl of light cream
60 g of sugar
1 lime

- Wash the 3 citrons then cut them in half lengthwise.
- Using a spoon, remove the flesh and place it in a bowl. Keep the citron skin.
- Press the flesh then pass everything through a sieve to collect the juice.
- In a saucepan over low heat, add the light cream and sugar and mix.
- Finally add the citron juice and mix again.
- Pour the mixture into the citrons then add the lime zest.
- Refrigerate for at least 2 hours to obtain a creamy texture.
